They are usually into the hulls pretty good. Sometimes you'll get lucky and find one that is loose or part of the hull plate is rotted away. More often, though, you have to get a long crow bar, hammer the short end underneath and give it all you've got - then a little more. Do that 4 or 5 times and you can get them to pop. Some are real stubborn and nothing short of a broco-torch will help. Sometimes I found if you take a punch you can drive out the rusted bolts and that makes it easier. In the Navy ships they used brass screws/bolts and it's easier to just unscrew them then to cut them. Most of the time we grab the swing plate fist, then the dogs. That makes it look like every other backing plate and then you can take your time with it - often years if need be. My friend John came up with a good way, take a pair of vice-grips down, knock the pin out enough to get the vice-grips on it, then twist them while you tap on them with the hammer, encouraging the pin to shear it's cotter pins and slide out. That stops you from mushrooming the pin so you can put it back together again. Save all the hardware; screws, pin, etc.. then you'll have original hardware to display it. It's amazing how many guys just throw that stuff away.
