Just buy some longer webbing and replace the webbing that came with the
setup.  It's only weight belt material, any dive shop should be able to
order it in in any length you need (12, 14 feet, whatever).

Making the shoulder straps longer will make for much easier donning.  I
just dive a single tank setup but the harness arrangement is the same.  No
problem quickly gearing up by myself, in the water or out (though I don't
use a dry suit so one less hose to deal with I guess, and less bulk).  

Are you actually doing "technical" diving (IOW do you carry stage bottles,
etc)?  If so others may be able to help with dealing with all the extra
bits and peices.  I'd imagine getting into the harness first and then
attaching the other "stuff" to your harness, would be the way to go <shrug>.
