Chuck, In Southern California there is a submarine canyon down at La Jolla. If you go from the beach the slope is very gradual. The best way to dive that area is to take an inflatable and a depth finder and go about 200-300 yards north of Scripps pier. I have dove on a wall there that starts at 130' and falls vertically to 305'. The canyon does have some spots that go from 200' to 600' almost vertical. Great spot for trimix. Also happens to be the area where the great whites like to give birth. Supposedly the moms don't eat in the area and the babies are too small to eat mammals like ourselves. My friends and I have seen lots of blue sharks and leopard sharks in the area. It's also a great place to night dive. If you need any info on visual references or GPS coordinates e-mail me.
