Using a dual outlet manifold to turn your 80's into doubles is actually
pretty easy.  There are a few things you should take into consideration 
before deciding this is the route you would like to take.  First, you 
want to invest in a dual outlet manifold, like the ones manufactured by
Dive Rite or OMS, avoid purchasing a suicide manifold that merely bridges
your existing valves.  When purchasing your bands, remember the diameter of
your 80's is 7.25", when you upgrade to steel cylinders many of them will
be 8.00" diameter so you will have to purchase an additional set of bands.
Theoretically you can modify some jacket BCs to accomodate doubles, having
done this myself, my recommendation is invest in a back bouyancy wings 
system designed for doubles (OMS or Dive Rite).  The jacket tends to pull
down causing the diver to lean forward, pretty painful on the back after
just a short amount of time.
