The main reason that I'm aware of that stuffing is bad is that once you deploy the hose (say for an OOA drill), it is very difficult to stowe it back without help. There may or may not be more reasons. As to losing control of the hose, it sounds like you don't have anything to loop it under. Do you dive with a canister light? If so, the hose should loop underneath. If you don't have a canister light, try tucking the extra loop of hose into your harness waist strap. My first long hose dive was with my old recreational BC and I had the same problem that you describe. By tucking the it in my waist strap I was able to keep the problem in check.
