Aldo,
for the shears, it is worthwile too, looking for cooking assets. I have
a Solingen WMF cooking scissors which are the sturdiest of them all. And
the cutout to grab the chicken bones is all it needs to grab and cut
wires, lines, you name it. 
When you find stainless ones, watch out wether the screw holding the2
halves together is ss, too. If not, replace it.
In a Brittany sailor shop I found an ecxellent pair of scissors from
Brazil, can be taken apart to serve as knives, serving salad,
screwdriver, can opener, among else. Piano wire cutter included.

For the titanium knives I suggest a diamond tool. May be the same price
as the knive. Thumb Rules are, get a hard stuff to grind a soft matter,
and vice versa. Titanium, even the Vanadium/ Aluminium alloys, is soft,
compared to steel ( talking of knives)
