Aldo,
the double angle , viewed from back, centers the bottles. The V-shape in
the middle, viewed from front, garanties freedom of movement for your
spine, so nothing can block there at the level of the spine appendices.
The holes....

Yes. in Germany. Kn- Tauchprodukte, for instance, well , if you have the
layout, any plumber can do it who has capacity for bending sheet metal,
and punch the holes.

Poseidon is qick release, quick disconnect, stainless steel.
Draeger is quick release. In times when rec jackets were not so 
superfluent, some good plastic backplates had very ggod harness systems
( fi. Barakuda, Spirotecnique)
