Sensor manufacturers pack their product in gas-tight bags containing either pure nitrogen or pure argon. Galvanic cells are effectively "put to sleep", and have indefinite shelf life if they are not exposed to oxygen. So as long as the bag containing the sensor does not have any holes (easy to check), then the sensor is almost certainly fresh.
