Mark,
You always want the lowest volume  wings to get the job done. Using a wing
much larger than you need, will cause poor diver trim, it will be less
hydrodynamic, and a very high capacity wing will actually start to become
dangerous as it goes beyond 25 or more pounds of excess lift on the
bottom --relevant in tropical conditions with light doubles.
Halcyon  37,  45, 55, and 65 lb wings for doubles--their Explorer
line ---the 65 is  for the larger volume steels and multiple stage bottles
used only in cave diving, and is most likely more lift than you will want
from your description.
With any of the Halcyon wings, you have additional lift should you need it,
from the Surf Shuttle or Supra CC (Closed Circuit) Lift bag which stores in
the back plate pouch ( between your back and the plate. Either can be used
just like a BC for ascent, by regulating the dump valve. Each connects to
the low pressure inflator hose, with a special No Lock connector, so their
is no danger of not being able to remove the connection the moment you have
enough air in it.
With this redundant lift capability, you should be more comfortable trying
to optimize your lift to the dive plan.
