The mechanism to deflate them -- metabolic use of oxygen -- does away with oxygen bubbles few minutes after your return to normoxia. You may be right in assuming that oxygen bubbles persist as long as they're bathed in oxygen enriched plasma. However, if an oxygen bubble ever blocks local circulation, local demand (downstream of the block) will start eating it away.
