We don't dive with drysuits here in Miami, but I don't find it 
particularly difficult to turn off the valve for a free-flowing 
regulator.  I have actually had to do it once when a hose blew during a 
descent.  The isolator valve in the middle of the manifold is much harder 
to shut off, but with practice it can be done.  It is NOT possible to 
shut it off quickly; I find that I have to twist it with my fingertips.

The trick to shutting off the valves for the regulators is to point your
elbow directly away from your chest and reach straight back for the first
stage.  Then you "walk" your hand across the first stage and hoses to the
knob.  If you try to reach around the tanks to the knob it's very
difficult to reach or find.
