I think the claim that the O-ring will let go refers mostly to instances of fire, in which heat, not overpressure, is the activator. But then, fire seems to be the main reason given for having burst disks. I can only think of three possible scenarios where overpressure protection would be desirable: fire, the near-apocryphal hot trunk, and accidental overfilling.
