Let me warn you, these don't come cheap.  The C-Questor starts at about $45,000.
I don't know anything about the company or have any experience with there subs.

The Kittrege sub made by Maynard, in the first reference starts at $200,000.
The plans are available for $500.  He does good work and has several subs in
the field.
