According to Bennett & Elliott, pg 384 (4th edition) :
When two sufaces in a liquid are pulled apart, viscosity prevents the liquid
flowing into the gap thus created. The local absolute pressure decreases
due to viscous adhesion. So, in the newly created gap, the bits of tissue
at the gap may become supersaturated, with the nasty consequences
implied.
The cavitation which may result was called tribonucleation by Haywood in
1967, in a paper in the British Journal of Applied Physics, called
'Tribonucleation of Bubbles'
