My first set of doubles was a set of AL80s. It wasn't too long before I started looking around for a way to cut the weight a bit since I my ocean diving wasn't requiring that much gas anyway. The limiting factor for me is how much deco I'm willing to tolerate in open water. I have a pretty high candyass factor. I bought some used steel 72s and made up two sets of doubles. They are great in the ocean and on land I can carry a set in each hand for quite some distance. In water, they require 12 pounds less weight than the AL80s. I suspect I'd be quite unhappy with the 72s if I was a caver since the capacity is much less than many of the cavers use. In that case, I'd use something larger so I wouldn't be turning dives early on the team. For the drysuit diving I am doing, the 72s are pretty much a perfect fit. The 80s are still around and are great for long, shallow wetsuit dives since the 72s are too dangerous for that. I have too little ditchable weight in a double steel 72/wetsuit configuration. Three sets of doubles is a maintainable collection for me.
