Way back in the seventies they taught us myelin was made from fat & cholesterol. If I recall correctly, nitrogen is preferentially absorbed by fatty tissues. I do not know why joints get hit. May I offer a wild-ass guess? Cartilage, tendons, bones, bursa, disks, et cetera [read structural elements] may be less well-perfused than muscle & organs [read active tissue].
