What about the plastic snap-type clips (the ones you squeze both sides of
to release)?  Has anyone had trouble with these (I understand they may not
function well in cold water)?  Is there a stailess steel equivalent?

I have used these "Fastix" clips on my harness for some time, easy to remove 
with gloves on and they can be opened in tight restrictions which is handy, 
never had any problems except lack of easy adjustment if this is important, 
never broken one (yet) and too gutless to get into very cold water but for my 2 
bobs worth they have been great.
