Three is the standard for wreck diving involving penetration, cave diving, and I believe dry caving. Unlike most of the components that we use, which are very reliable, lights are not very reliable at all. So unlike most life critical systems in diving, where full redundancy is considered sufficient, lights have triple redundancy. Of course, if your light is not necessary, leave it behind. If it is necessary for enjoyment of the dive (e.g. for poking into holes), but not necessary for safe completion of the dive, taking one light is just fine. But in most low or no ambient light situations, take three. (Braille dives are an exception - take none!)
