I'll keep an eye out for something similar.  I saw a knife a while ago
made from 316, but can't remember who this was made by.  I suppose it
would be a little softer than the martensitic grades, but then I don't
anticipate needing to cut anything very hard.

Let me know if you find a manufacturer for knives in 316 SS.
