John, I've made one of these. I've got all the suppliers details at home. IIRC, they give an output of around 13mV at 21%, or 60mV for 100%. I believe the transducer is essentially a current source, so you need to connect a 100 Ohm load resistor across the output to get these figures. You can expect to pay about 65UKP for one transducer, and then whatever you spend on the box, display and other bits and pieces.
