Knives are better for measuring King crab carapaces to see if they are
legal size (7") but for God's sake, don't buy a 7" blade, you get a
smaller knife and mark the handle.

Knives are better for cutting cheese and meat on the dive boat.

Knives are better for slicing the regulator hose of an underwater
attacker like in James Bond.

The correct knife is probably marginally easier to stow in the correct
streamlined position on your waist belt.

Knives are better for heavy rope and kelp.

Paramedic shears are definitely better for steel fishing leaders and
heavy monofilment.

That's all I can think of at the moment.
