You don't need to "dedicate a tank" to do it right.
However, most "technical divers" I've met have dedicated at least one
tank to O2.
The other tank, whatever the MOD is of the gas, can be labelled with a
piece of fancy dancy duct tape and a magic marker.
As for the requirement to analyze all gas, yes, if you're doing any sort
of technical dive you need to analyze all gas. I can't believe you let
an instructor teach that doesn't make his students analyze everything.
As you pointed out the dive shop screwed up by filling an "air bottle"
with non-air, but if the instructor had been doing his job he'd realize
the human element (the dive shop) could make mistakes and would have
analyzed the gases to prevent that.
